Dave and I are such avocado lovers–we enjoy them all day long: as avocado toast for breakfast, in guacamole with chips for snacks, and this wonderful avocado salad for lunch or as a side dish for dinner.
So, not long ago, when our California nephew and his lovely wife sent us a box filled with huge avocados from their very own avocado trees, we were beyond excited.
Let me tell you, they were the best we’ve ever tasted–so creamy and delicious–we were in avocado heaven for the next few days!
Whether you’re blessed to have fresh avocados growing in your back yard or buy them at the grocery store, this fresh avocado salad is the perfect way to get your daily avocado fix.
With the addition of cucumber, tomato, onion, and feta, this beautiful avocado salad makes a great light lunch or the perfect side dish for simple warm-weather suppers on the patio. Enjoy!
Avocado Salad with Feta and Cucumber
2 Roma tomatoes, diced (I use this chopper to dice my tomatoes and onions)
1/3 cup red onion, diced
1 cucumber, chopped
2-3 Tablespoons crumbled feta
2 avocados, diced
1 teaspoon lemon juice
1/2 bunch fresh cilantro (or parsley), chopped
2-3 Tablespoons extra virgin olive oil
Salt and pepper to taste
1. In a large bowl, toss together the tomatoes, onion, and cucumber.
2. In a separate bowl, toss the avocados with lemon, then add to bowl with cucumber mixture.
3. Stir in the cilantro. If you’re serving the salad later in the day, cover and place it in the fridge at this point and save Step 4 for right before you serve the salad.
4. Right before serving, season w/ salt and pepper, sprinkle with feta, drizzle with olive oil, and lightly toss.
