One of my favorite things to do is sit down to a leisurely breakfast of a cup of coffee and a bowl of oatmeal, but on weekdays I simply don’t have (or make) the time.
That’s why, when I found these super-moist Oatmeal Applesauce Muffins, it was a game-changer. Now I can enjoy my healthy morning oats every day of the week!
Jam-packed with delicious dried cranberries and walnuts and crowned with a crispy topping of oats, brown sugar, and cinnamon, these good-for-you oatmeal applesauce muffins have it all.
I love eating these lovely gems warm and slathered with a pat of butter or a bit of sunflower butter. What a beautiful way to start the day!
Scrumptious & Healthy Oatmeal Applesauce Muffins
Makes 10 to 12 muffins
1-1/2 cups quick or old-fashioned oats
1-1/4 cups all-purpose flour
1/2 cup packed brown sugar
1 teaspoon baking powder
3/4 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon sea salt
1 cup unsweetened applesauce
1/2 cup milk of choice
3 tablespoons melted coconut oil, butter, or ghee
1/2 cup dried cranberries
1/2 cup chopped walnuts
1/2 cup quick or old-fashioned oats
2 tablespoons brown sugar
1/2 teaspoon ground cinnamon
2 tablespoons melted butter, or ghee
- Preheat oven to 400F. In a large bowl combine the first seven ingredients. In a separate bowl, combine the applesauce, milk, coconut oil, and egg. Stir wet ingredients into dry ingredients just until moistened. Stir in the cranberries and walnuts until incorporated Coat muffin cups with cooking spray and fill 3/4 full with batter.
- Combine the topping ingredients and sprinkle over the top of the batter. Bake at 400° for 15-16 minutes or until the top springs back when pressed. Cool 10 minutes in pan before removing to a wire rack. Serve warm and store leftovers in the refrigerator or freezer.
